Lasagna

So the other night I ate lasagna. It was my aunt’s homemade recipe. My family drove from Connecticut to New York just for this reason. I entered the house and immediately smelled what could only be lasagna. The tomato sauce gave off a hint of herbs and spices. The creamy white sauce mixed in perfectly with the tomato sauce creating a light pinkish color. The meat in between layers with cheese on top, it was irresistible. Each component complimented the next. We all sat down at the dinner table as the lasagna was served fresh out of the oven. Everyone cut their own piece. It was a little unstable when you tried cutting a piece but that didn’t matter because when I took a bite, OMG I thought I was in heaven. I tried not to eat it too fast so I could take in the fullest amount of flavor. Each sauce complimented the other adding to the essence of the lasagna as a whole. Every aspect of it was good event how long the pasta cooked for. My grandpa says it’s “al dente”. Needless to say it was excellent, I went back for seconds and rather than eating dessert when it was served, I helped myself to more lasagna.

Lasagna...the quintessential comfort food and so variable...from a simple bolognese, to a more complex roasted butternut squash, parsley hazelnut pesto white lasagna. MMMM. And fresh pasta makes all the difference, if you have that option.
